About this Recipe

Tabbouleh is a Levantine vegetarian salad made mostly of finely chopped parsley, with tomatoes, mint, onion, bulgur, and seasoned with olive oil, lemon juice, salt and pepper. Some variations add garlic or lettuce, or use semolina instead of bulgur.  

Ingredients

  • red onion
  • 12 stems roasted asparagus
  • 3 cups  cooked quinoa
  • 1 cup red pepper
  • 1 cucumber
  • Hummus
  • Pesto to serve

1. Chop and dice all the ingredients

2. Combine all of the ingredients in 4 bowls, laying each one out separately and serve with pesto or balsamic and olive oil
