🥜 Almond Butter Easter Eggs

Method:

  1. Mix the filling – In a large bowl, combine almond butter, honey, vanilla extract, sea salt, and whey protein. Gradually stir in almond flour until the dough is thick and easy to roll.
  2. Shape into eggs – Roll the dough into egg-shaped ovals and place them on a parchment-lined tray. Freeze for 20–30 minutes to firm them up.
  3. Melt the chocolate – Using a double-boiler melt the refined sugar-free chocolate drops with coconut oil until smooth.
  4. Dip and sprinkle – Dip each egg into the melted chocolate, letting the excess drip off. Place back on the tray and sprinkle with a pinch of Celtic Sea salt while the chocolate is still soft.
  5. Chill and enjoy – Refrigerate until the chocolate is set (about 30 minutes). Store any leftovers in an airtight container in the fridge.
