Gluten-Free & Sugar-Free Chocolate Chip Oat Pancakes for Easter Weekend

These gluten-free, sugar-free chocolate chip oat pancakes are the perfect way to ease into the weekend. They’re naturally sweetened, hearty, and comforting—just the kind of breakfast that feels like a warm hug on a peaceful morning. 

 

🥞 The Recipe: Chocolate Chip Oat Pancakes (Gluten-Free & Sugar-Free) 

Ingredients: 

  • 1 ripe banana 

  • 2 eggs 

  • 1/4 cup unsweetened milk of choice (oat, soy, or dairy) 

  • 1/2 cup gluten-free oats 

  • 1 tsp baking powder 

  • 1/2 tsp vanilla extract 

  • Pinch of sea salt 

Optional toppings: 

  • Fresh berries or banana slices 

  • Extra chocolate chips 

  • Greek yoghurt 

  • A dash of cinnamon 

Instructions: 

  1. In a bowl, mash the banana and whisk in eggs, milk, and vanilla. 

  1. Stir in oats, gluten-free flour, baking powder, cinnamon, and salt. 

  1. Fold in chocolate chips and let the batter rest for a couple of minutes. 

  1. Heat a lightly greased skillet over medium heat. 

  1. Scoop batter into small pancakes and cook for 2–3 minutes on each side, until golden and fluffy. 

  1. Stack them up, top as you like, and enjoy a slow, intentional start to the day.
