To reactivate the kefir grains, please hydrate them with water. Add enough water to fully cover the grains and cover the container with a mesh cloth fixed by the rubber band or place the lid loosely on top to allow airflow. The reactivation process usually takes 3–7 days. You can also use fresh milk to rehydrate the grains. Once the grains appear plump and active, you can begin fermentation.
For fermentation, use the following ratio:
- All the kefir grains
- 250 ml of fresh milk - NB: DO NOT USE THE UHT MILK OR MILK IN THE BOX.
Allow the mixture to ferment for 24–48 hours.
Usually the second fermentation is better compared to the first. This is because the grains are in a dormant stage and will take time to revive them.
For milk kefir - when ready it has a yoghurt like texture and there is no separation that is visible. If over fermented. Mix everything together and strain out the grains. Redo the process grains plus 250ml of fresh milk.
